Klappertaart

Just in case anyone wanted to see the results of our baking yesterday...this is our Klappertaart. We ended up a little shy on young coconuts, so instead of using the pastor's wife's recipe I just used a basic custard recipe and substituted a few things instead...the filling is young coconut in custard with rum flavoring, raisins, and kenari - I think those are called candle nuts (?) - they're like a waxy almond. That's all baked with a meringue on the top. I like my version better...other recipes I've seen use both cornstarch and flour, and you can always taste the flour - I don't care for that.

MMMMMMMMMMMMMMMM.........it was so good.

By any chance, is this a german receipe? If so, do you know how to make German Gruppa (homemade donuts)?

Just curious, my uncle has been in/out of the hospital/nursing home for 3 years now and he always talks about how they would have this Gruppa on Fridays.

    Hugs,
    Gina
